Berry Salad with Soya Yoghurt

Ingredients

450g strawberries, cut in half

150g raspberries

100g blackberries

100g blueberries

100g black seedless grapes

100g stoned cherries

1 tablespoon caster sugar

½ lemon, juiced

3 tablespoons low-fat soya yogurt

A bright and beautiful fruit salad, perfect for Summer. Experiment with different fruits year-round and choose a soya yoghurt to add to your soya foods for the day. 

Ingredients

450g strawberries, cut in half

150g raspberries

100g blackberries

100g blueberries

100g black seedless grapes

100g stoned cherries

1 tablespoon caster sugar

½ lemon, juiced

3 tablespoons low-fat soya yogurt

Method

  1. Mix all the fruit together in a bowl.
  2. Add the sugar and lemon juice to the fruit and gently toss together.
  3. Top with low fat yoghurt.
  4. Serve straight away or cover and chill briefly before adding the yoghurt.
