Perfect for a super quick supper or as a light lunch for one.
- 2 eggs, lightly beaten
- 1 tbsp finely chopped onion
- ½ red pepper, seeds removed, chopped
- 1 tbsp chopped fresh coriander
- 1 green chilli finely chopped (or to taste)
- 1 chopped tomato
- 1 tsp rapeseed oil
Combine all the ingredients (except the oil) in a bowl and mix well.
Put the oil in a non- stick frying pan over a medium-hot heat. When hot, pour in the egg mixture.
Keep mixing the egg whilst it is solidifying, when semi-solid let it form into an omelette shape
Turn the omelette over and press down.
Remove when cooked through and serve immediately.
