Spicy Bean Cakes

Ingredients

800g tinned kidney beans, rinsed and drained

200g tinned butter beans, rinsed and drained

200g tinned black eye beans, rinsed and drained

200g cooked red lentils 

1 onion 

1 chilli 

100g wholemeal breadcrumbs 

A handful of chopped parsley 

3 tbsp olive oil

High in dietary fibre and low in fat, these spicy bean burgers are the healthy way to enjoy fast food.

Ingredients

800g tinned kidney beans, rinsed and drained

200g tinned butter beans, rinsed and drained

200g tinned black eye beans, rinsed and drained

200g cooked red lentils 

1 onion 

1 chilli 

100g wholemeal breadcrumbs 

A handful of chopped parsley 

3 tbsp olive oil  

Method

Place two-thirds of the beans in a food processor and blend until they form a rough paste. 

Fry the onion in 1 tsp of the oil until they have softened. 

Place the blended bean mixture in a bowl and stir in the remaining beans as well as the onion, lentils, parsley, chilli and breadcrumbs until well combined. 

Shape the mixture into patties and flatten the top. 

Heat the rest of the olive oil in a frying pan and fry the patties for 4 minutes on each side or until golden and cooked through.
