Tasty Tuna Sandwiches

This lighter take on the classic 'tuna mayo' will be a hit for lunchtimes on the go.
1 can of tuna in spring water, drained
2 tbsp low fat Greek style yogurt
1 tbsp chopped fresh coriander
Ground black pepper
4 slices wholemeal bread or 2 rolls
1/4 cucumber, diced
1/4 red bell pepper, diced
handful fresh salad leaves
Scrape low fat mayonnaise - if needed
Mix with the yogurt with the coriander and season with black pepper. Flake in the tuna and add the diced cucumber and red pepper.
Spread the 2 slices of bread with a little low-fat mayonnaise (to help the filling stick to the bread) and then divide the tuna mixture over the slices.
Top the filling with salad leaves and the remaining bread slices and serve.
