Traditional Spanish Paella

Ingredients

1 tbsp olive oil 

2 chicken breasts cut into chunks 

50g king prawns 

100g mussels 

1 clove of garlic 

3 medium tomatoes, chopped  

200g paella rice 

Pinch of saffron 

1L low salt chicken stock 

100g cherry tomatoes 

100g broad beans

Whip up this heart-healthy version of the traditional Spanish one-pot recipe,  perfect for feeding friends at a dinner party.

Ingredients

1 tbsp olive oil 

2 chicken breasts cut into chunks 

50g king prawns 

100g mussels 

1 clove of garlic 

3 medium tomatoes, chopped  

200g paella rice 

Pinch of saffron 

1L low salt chicken stock 

100g cherry tomatoes 

100g broad beans 

Method

In a large pan, heat the olive oil and fry the chicken for 2 minutes. Add the prawns, mussels, garlic and tomatoes and fry for 2 more minutes. 

Sprinkle in the rice and shake the pan. Add the saffron and pour in the boiling chicken stock. 

Add the chopped tomatoes and broad beans, season and then let simmer for 20 minutes.  

You may need to add more fluid if the rice appears to be drying out 

Check the seasoning before serving.
