Enjoy these delicious smoky beans. Team with sourdough bread for a delicious brunch, although they taste great any time of day! Making your own beans is quick and easy and means you can control the amount of fat, sugar and salt they contain. This dish is low in fat, saturated fat and salt, contains no added sugar and is high in fibre, providing a third of your daily requirements.
Ingredients
1 tsp vegetable oil
1 clove garlic, crushed
1 x 400g can cannellini beans, drained and rinsed
1.5 tsp smoked paprika
¼ tsp chili flakes
Half can chopped tomatoes (200g)
2 tsp tomato puree
Freshly ground black pepper
2 large slices sourdough bread
20g ProActiv Light
1 tbsp fresh parsley, chopped
Method
Heat the oil in a medium saucepan. Fry the garlic, beans, paprika and chili flakes for 1 minute
Add the tomatoes and tomato puree and generously season with black pepper
Simmer on a low heat for about 5 minutes
While the beans are cooking, lightly toast the sourdough bread
Spread the ProActiv onto the toast, pile the beans on top and garnish with chopped parsley.
