Ingredients
500g Alpro Plain No Sugars alternative to yogurt
1 medium ripe banana
1 tbsp peanut butter
1 medjool date, pip removed
3 tbsp unsweetened muesli
125g raspberries
A sprinkle of ground cinnamon
A few mint leaves
Method
Put your Alpro Plain No Sugars in a blender, and add the banana, peanut butter and date and whizz until smooth.
Line a 15x22cm tray with baking paper. Spread the Alpro mixture over it and then scatter the raspberries, muesli, cinnamon and mint over the top.
Pop into the freezer until well set and frozen - allow 3-4 hours.
This dish is great as a snack or pudding or even at breakfast.
