Mexican Skewers with Spicy Rice & Lime Yogurt

Ingredients

Wooden skewers, soaked in water

The marinade

2 cloves garlic, crushed or grated

1 tsp ground cumin

1 tsp chili powder

½ tsp paprika

½ tsp dried oregano

2 tbsp olive oil

300g Quorn Pieces

Spicy rice

200g wholegrain/brown rice

1 tbsp vegetable oil

½ a reduced salt vegetable stock dissolved in 400ml boiling water

1 red bell pepper, deseeded and diced

1 red onion, chopped

1 tsp ground cumin

1 tsp chili powder

200g canned black beans, drained and rinsed

Fresh coriander, roughly chopped

Lime plant-based sauce

200g 0% fat Greek-style dairy yogurt OR Alpro Plain Greek-style alternative to yogurt

Zest and juice of 1 lime

½ tsp chili powder

Good pinch black pepper

To serve: Mixed salad

200g 0% fat Greek-style dairy yogurt OR Alpro Plain Greek-style alternative to yogurt

To serve: Mixed salad

Method

Marinate the Quorn Pieces: In a bowl, combine the garlic, cumin, chili powder, paprika, dried oregano, olive oil and a good pinch of freshly ground black pepper to create the marinade.

Thread the Quorn Pieces onto the soaked wooden skewers.

Place the skewers in a shallow dish and brush the marinade over them. Ensure they are well-coated and pour any remaining marinade over them. Let them marinate for at least 30 minutes.

In the meantime, prepare the spicy rice

Rinse the rice under cold water until the water runs clear.

In a large saucepan, sauté the red bell pepper and red onion in the oil until they begin to soften. Add the rice and sauté for another minute.

Stir in the ground cumin, chili powder, and a good pinch of freshly ground black pepper. Pour in the vegetable stock and bring to a boil. Reduce the heat, cover, and simmer for about 15-20 minutes (check the pack instructions) or until the rice is cooked and the liquid is absorbed.

Stir in the black beans and let them heat through for a few minutes.

Fluff the rice with a fork, and stir through the chopped coriander, and keep it warm.

Make the lime plant-based sauce

In a bowl, combine the 0% fat Greek-style dairy yogurt OR Alpro Plain Greek-style alternative to yogurt, lime zest and juice, chili powder, and a good pinch of freshly ground black pepper. Mix well.

Grill the marinated Quorn Pieces

Pre-heat your grill or grill pan to medium-high heat. Grill the marinated Quorn skewers for about 3-4 minutes each side or until they have grill marks and are heated through.

Serve the skewers with the spicy rice, lime sauce and fresh mixed salad.
