Fruity Granola Bowl

Ingredients

Granola mix (serves 12)

50ml olive oil

75g unsweetened apple puree or apple sauce

175g rolled oats

100g mixed nuts

50g pumpkin seeds or seeds of choice

1 tsp of ground cinnamon

50g dried fruit e.g, golden sultanas, chopped apricots

To serve – per person

125g Alpro Soya No Sugars alternative to yogurt

2 tbsp granola mix

1 banana, peeled and sliced

Handful of berries e.g. sliced strawberries, raspberries, blueberries

Start the day with a crunch! A tasty granola recipe with crispy oats, nuts, seeds and fruit. A delicious way to keep your saturated fat down and achieve 2 of your 5-a-day at breakfast or as a snack.

Method

Preheat oven to 160C / fan 140 / gas 3.  Line one baking tray with parchment paper.

Add the oil and apple sauce to a bowl and mix to combine.  Add the dry ingredients, apart from the dried fruit, to the bowl and stir into the apple mixture. Spread the mixture out on the baking sheet.

Place in the preheated oven and bake for about 55-60 minutes until golden, stirring occasionally so the granola cooks evenly and does not burn.

Leave the granola to cool to room temperature and crisp up on the tray.

Once completely cooled, mix the dried fruit into the granola and transfer to an airtight container and store in a dry place.

To serve: pour the yogurt into a bowl, top with the granola mix and fresh fruit.
