Meat Free Lasagne

Ingredients

1 tbsp oil

1 onion, finely chopped

100g mushrooms, sliced

2 cloves of crushed garlic

500g Quorn Mince

400g tin chopped tomatoes

3 tbsp vegetarian red pesto

1 tsp oregano

3 tbsp red wine

1 reduced salt vegetable stock cube

2 tbsp fresh basil, shredded

8-10 lasagne sheets – wholegrain if possible

Sauce

25g unsaturated fat spread e.g. olive or sunflower

25g plain flour

300ml Alpro Soya No Sugars alternative to milk

75g reduced fat cheddar, grated

An Italian classic that can help with managing cholesterol levels!! Our delicious and rich lasagne recipe has switched meat for Quorn Mince, added in loads of yummy veggies, and uses soya drink to make the rich bechamel sauce.  A great way to keep sat fat downs, boost your protein and fibre intake and not compromise on flavour.

Ingredients

1 tbsp oil

1 onion, finely chopped

100g mushrooms, sliced

2 cloves of crushed garlic

500g Quorn Mince

400g tin chopped tomatoes

3 tbsp vegetarian red pesto

1 tsp oregano

3 tbsp red wine

1 reduced salt vegetable stock cube

2 tbsp fresh basil, shredded

8-10 lasagne sheets – wholegrain if possible

Sauce

25g unsaturated fat spread e.g. olive or sunflower

25g plain flour

300ml Alpro Soya No Sugars alternative to milk

75g reduced fat cheddar, grated

Method

Preheat the oven to 200C / 180C fan / gas 6.  Grease a lasagne oven proof dish.

Heat the oil in a frying pan and fry the onion for 5 minutes until softened.

Add the mushrooms and cook for a couple of minutes. Add the garlic and cook for one more minute.

Stir in the Quorn Mince and then the tomatoes, vegetarian red pesto, oregano, wine and crumbled vegetable stock cube. Increase the heat and bring to the boil stirring, then reduce the heat to a simmer and cook for 5 minutes.

Stir in the basil, season with freshly ground black pepper to taste then remove from the heat.

Make the sauce. Melt the spread in a pan, stir in the flour and cook gently for a minute stirring constantly.  Take off the heat and gradually add the Alpro Soya No Sugars drink whisking well after each addition to prevent lumps.  Once all the liquid has been added, return to the heat and stirring constantly, bring to the boil and allow it the thicken.  Add the grated cheese, and simmer gently for 2 minutes, stirring constantly.

Assembly. Spoon half of the Quorn Mince mixture over the base of the ovenproof dish, top with a single layer of lasagne sheets.  Repeat the layers finishing with a layer of lasagne sheets.  Pour over the cheese sauce.

Bake in the preheated oven for 25-30 minutes until the top is golden brown and bubbling.

Serve with a green salad.
