Taco Feast

Ingredients

Taco seasoning

1 tsp ground cumin

1 tsp ground coriander

1 tsp chilli powder

1 tsp paprika

Good pinch freshly ground black pepper

1 tbsp oil

300g Quorn Mince

1 bag lightly salted tortilla chips

200g Alpro Greek-style alternative to yogurt

120g salsa dip

Large bag mixed salad

200g can sweetcorn

1 large cucumber, sliced

2 medium tomatoes, sliced

100g pickled red onion

1 lime, cut into wedges

8 taco shells or tortilla wraps

A great crowd pleaser where everyone gets stuck in! This Taco feast is full on flavour, textures and fibre whilst keeping sat fats down.  Each serving is a source of protein and provides one of your 5-a-day. Let everyone grab a taco and top it with their choice of a selection of Mexican ingredients.

1 tsp ground cumin

1 tbsp oil

300g Quorn Mince

1 bag lightly salted tortilla chips

200g Alpro Greek-style alternative to yogurt

120g salsa dip

Large bag mixed salad

200g can sweetcorn

8 taco shells or tortilla wraps

Method

Mix the taco spices together and put to one side.

Fry Quorn Mince in a pan with the oil over a medium heat until thoroughly warm, around 5-7 minutes. Add taco spice mix and a splash of water and heat while stirring to evenly distribute the seasoning.

Prepare the taco feast toppings and set aside in individual bowls – to allow individuals to pick and choose their favourite toppings.

Lay out Quorn Mince with the remaining toppings and assemble tacos to your liking!
