Quick and Easy Burritos

Ingredients

Mince

1 tbsp rapeseed oil

300g Quorn Mince

2 tsp ground cumin

1 garlic clove, crushed or grated

Freshly ground pepper

Jalapeno mayonnaise

2 tbsp finely chopped jalapeño

1½ tbsp reduced fat mayonnaise

To serve

4 wholemeal tortillas/wraps

1 tomato, roughly chopped

1 small red onion, sliced

1 (~500g) Romaine lettuce, roughly shredded

1 red pepper, cut into fine strips

1 courgette, cut into long batons/strips

75g 30% reduced fat cheddar cheese, grated

A deliciously meat-free burrito recipe that can be ready in just 15 minutes. It delivers on flavour and a little heat, as well as nutrition that helps maintain normal cholesterol levels. Each serving is low in sat fat, rich in protein, low in salt, provides over a third of your recommended fibre intake and three of your 5-a-day!

300g Quorn Mince

Jalapeno mayonnaise

1½ tbsp reduced fat mayonnaise

To serve

Method

Mix together the mayonnaise with the chopped jalapeño and set aside.

Prepare the mince: fry the Quorn Mince in the oil over medium heat until it starts to colour. Add the garlic, cumin and black pepper then cook for a further 2 minutes, stirring.

Assemble: Thinly spread each wrap with the jalapeno mayonnaise, then pile on the salad vegetables, followed by the Quorn Mince mixture and finally sprinkle the grated cheese over the top. Tightly wrap up each burrito and enjoy!
