Tzatziki

Ingredients

400g Alpro Plain Soya alternative to yogurt

1 large cucumber

2 garlic cloves, crushed

1 lemon, zest and juice

5 fresh mint leaves, finely chopped

3 tablespoons fresh dill, finely chopped

1 tbsp olive oil

Pepper to season

Ingredients

400g Alpro Plain Soya alternative to yogurt

1 large cucumber

2 garlic cloves, crushed

1 lemon, zest and juice

5 fresh mint leaves, finely chopped

3 tablespoons fresh dill, finely chopped

1 tbsp olive oil

Pepper to season

Method

Finely chop the fresh herbs and grate the zest of the lemon.

Coarsely grate the cucumber, put it in a sieve and squeeze out any excess liquid with the back of a spoon.

Mix all the ingredients together, and season with a few grinds of pepper, adding a little extra lemon juice if you like.

Chill the tzatziki in the fridge for at least an hour and serve with flatbreads or falafel. The perfect pre-meal appetiser to get those taste buds tingling!
