Apple and Pear Overnight Oats

Ingredients

For the oats

1 small apple, cored and finely grated

1 pear, cored and finely grated

150g oats

350ml Alpro Soya No Sugars drink

2 tsp sugar free peanut butter or another nut butter of your choice

 

For the fruit compote

1 apple, finely chopped

1 pear, finely chopped

2 tbsp of water or fruit juice

Pinch of cinnamon or ground ginger

 

To serve:

3 tbsp Alpro Plain No Sugars alternative to yogurt (1 tbsp per serve)

2 tsp sugar free peanut butter or another nut butter of your choice

 

Preparation time: 25 minutes + overnight chilling in the fridge

A deliciously 100% plant-based heart healthy recipe that contains no added sugars. Cholesterol-lowering beta-glucan packed oats are paired with naturally low in saturated fat and sugar free soya drink, apples and pears and a touch of spice.

3 tbsp Alpro Plain No Sugars alternative to yogurt (1 tbsp per serve)

Method

Mix the apple, pear, oats and Alpro Soya No Sugars drink together in a medium mixing bowl or container with an airtight lid, then stir in the 2 teaspoons of peanut butter. Cover with cling film or lid and store in the fridge overnight (about 8 hours).

For the compote. Place the chopped apple and pear into a small saucepan with 2 tbsp of water or fruit juice, cover with a lid and gently cook on medium heat for 5 minutes. Add the spice of your choice, gently stir to combine then cover and continue simmering on medium heat for another 5-10 minutes or until the fruit has softened and broken down a little. Set aside, cool at room temperature, cover and place in the fridge.

Next morning, spoon the overnight oats into three bowls and top with Alpro Plain No Sugars alternative to yogurt, some compote and drizzle over the peanut butter.
